Oat & Banana Pancakes


Ingredients

  • 2/3 Cup Gluten Free Oats (Preferably Sprouted)
  • 1/3 Cup Buckwheat Flakes
  • 1 Egg
  • 2 Tbsp Nut Butter
  • 1 Large Ripe Banana
  • 1 Tsp Baking Soda
  • 1 Tbsp Apple Cider Vinegar
  • 100ml milk (If soaking oats 150ml if unsoaked)
  • 2 scoops Egg White protein powder (Or protein powder that fits your diet)

Directions

  • Soak oats & buckwheat flakes over night in 150ml milk or water or as long as possible, this aids in breaking down phytates in oats
  • When ready to make pancakes blitz oats & buckwheat to a smooth consistency
  • Add banana, nut butter (Of your choice not peanut) blitz & then add egg and egg white powder & blitz together
  • Whist blitzing together slowly add milk until desired level of consistency
  • Add mix from food processor to bowl & add baking soda & ACV & stir by hand
  • Add any additional flavourings & stir through, cinnamon, nutmeg, cacao, macca the options are endless…
  • Ensure pan is fully warmed to low-med heat hot enough so batter sizzles on contact
  • Turn oven to lowest setting
  • Cook on one side until done 3/4 through, the pancake should slide around the pan & not stick
  • Before turning add any other desired filling i.e. Blueberries, turn and cook on the other side
  • Put on a plate in oven whilst you cook others, ideally cook two at a time
  • Once all batter is used top with your desired toppings and enjoy!

  • Fresh Berries, coconut & Coyo
  • Nut Butter & Banana
  • Buckwheat groats for a bit of crunch, cacao & cinnamon
  • All of the above..!
