This curry is so easy to make and so tasty. Add to a simple base, of onions, garlic, ginger, tinned tomatoes and coconut milk. Flavoured with smoked paprika, turmeric, cumin. Roasted butternut squash, cauliflower florets, broccoli and chick peas and spinach stirred through as a final addition.
Served here with quinoa, can be served with cauliflower rice.
